We attended the November 9th "Eat to the Beat", and here's a listing of what was there!
I forgot to put this at the bottom of my report on ETTB, so I'll just list it here.
The Food ~~~
The food was arranged all around the room, with 'stations', where chefs did their magic! Some of these stations were VERY crowded, with waits, I'd estimate, as long as a half hour. (V&A's station, Jiko's, and others)
ENTREES
"Roasted Tenderloin of Beef w/Chasseur Sauce" Jean Louis - Celebration Hotel
This was one of the stations closest to the entrance, and thus, one of the first
we tasted. It was a small medallion of meat that was fork tender, with a mushroom sauce - excellent!!
"Berbere Braised Lamb Leg ,Toasted Couscous & Baby Spinach" - Nicholas Pastis, Jiko
I've had this at Jiko, though I didn't get to taste it here, as the line never seemed to go down! LOL It's a wonderful dish, somewhat similar in taste to a veal shank.
"Broiled Spanish Mackeral, Carmelized Shallot & Potato Pave" - Mark Franz, Farallon - SF, Ca
This wasn't for me - I just didn't care for the oiliness of it...
"Quail Medallion with smoked Pheasant and Shiitake Mushroom Mousse, Soft Marscapone Yellow Grits
with Sweet Corn and a Micro Salad Sensation, Black Truffle Veal Reduction" - Jay Lovell,Lovells of Lake Forest, Lake Forest, IL
One of THE BEST dishes of the evening!! The Pheasant was surrounded by the quail, both were very tender and tasty, and those grits!! Mmmmmmmmmmm!!!! I had several servings of this!
"Mojo Pork with Chorizo Cheese Grit Cake & Mango Vinagrette" - Gerard Marquetty, Lackman Culinary Services, Odessa, FL
This sounded wonderful to me, but it was a bit disappointing. I think I was expecting a spicier pork, with a lot of kick to it, but it wasn't that. It was very lightly spiced instead.
"Steak Gumbo with Cheddar Cheese Grits & Wilted Mustard Greens" - Michael Reitzler, Yachtman's Steakhouse
I think this gumbo was out of this world!!!!! I'm NOT a fan of Yachtsman's at ALL, but my goodness was this good!! Really nice pieces of steak, no fat on them ... a luscious broth and the grits were perfect with it! I had 2 or 3 of these too!
"Pan Roasted Grouper Cheeks with Crispy Pasta" - Jose Camey, CRT
Another terrific dish! The fish had a really nice, light crunch to the outside from being sauteed, with a good flavor, and the pasta was a perfect match.
"Braised Veal with Mushrooms and Truffle Emulsion" - Scott Hunnel, Victoria & Alberts
Most unfortunately, I didn't get to try this, as it was the busiest station there.
"Lobster Stuffed Spinach Ravioli with Grilled Portabello Mushrooms and Frisee, Gorgonzola Cream and Walnut Oil" - Stephen Gary, Tony's Town Square Restaurant
"Beef Medallion with Pumpkin Risotto, Apple Poblano Chutney" - J. Alphonoso Walker, WL
This was extremely delicious!! Again, the meat was fork tender and went great with the chutney. I do think the risotto could have had a bit more of a pumpkin taste to it, though it was still good!!
"Sourdough Crusted Dungeness Crab Risotto Cakes on Cioppino" - Alan Peters, Contemporary Catering
Wow .. I totally missed this one! LOL Too bad too, because I love the sound of it!
"Marscapone and Goat Cheese Ravioli with Tri Colored Peppers, Roasted Tomato Coulis and Basil Oil" - Wade Camerer - Restaurant Akershus
This was good as well. I'm a slightly bigger fan of seafood stuffings in raviolis,
but I still enjoyed it. The Roasted Tomato Coulis was especially good with this.
"A Truffled Flan of Hudson Valley Foie Gras, with Fig Glaze" - Michael Ginor - HVFG, NY
I'm just not wild about the consistency of flan, no matter if it's sweet or in a preparation like this, so I passed..
"Confit of Veal served on wilted Baby Bok Choy and Oyster Root Salad, finished with Sour Sop sauce" - Burrell Massey - Le Cellier
I liked this a lot - a slightly different 'take' on veal, with the Asian ingredients used.

DESSERTS
"Apple Cranberry Compote with Buttermilk Caramel Ice Cream and Roasted Nutbridle"
"Banana Tart Tatin with aged Rum Chocolate Sauce" - Andreas Born, BWI
The Apple dessert was one of the best of the night! The apple/cranberry compote went SO well with the nutbridle - it was delicious! I didn't try the Tatin, because I don't like bananas too much, but my husband did, and he said it was very good!
"Chocolate Caramel Obssession" - P. Ewald Notter - MD
THIS was the big dessert winner of the night for me! I don't normally go wild for chocolate, but I did this time! These were dome shaped, with a light, crunchy bottom, and this amazing, even lighter bittersweet chocolate mousse, and caramel 'spun' ribbons on top - incredible!
"Florida Orange Zinger with Honey Brandied Oranges" - James Rabb & Jason Stricker - Contemporary
I didn't try this, only because I was getting full! LOL
"French Apple Tart, Caramel Sauce and Creme Fraiche" - Emily Luchetti - Farallon, SF, CA
Mmmmmmmmmmmmmmmmmmmmm!! One of the best of this sort that I've ever tasted!!

There was also a large selection of all sorts of Artisan Cheeses, and crackers too.
WINERIES
I tried to sample wines/champagnes/sparkling wines that I haven't had before, just to try something new. I did, however,also taste some old favorites as well. And, I just wasn't able to taste ALL of the wines! LOL So if a listing is blank, that means I didn't try it, because I've already had it before and liked it, or didn't get to it. There are comments under certain wines, just because I especially liked some.I don't like beer, so did not try that.
La Creme - Sonoma Coast Chardonnay, Russian River Valley Pinot Noir, Russian River Valley Zinfandel
I tried the Chardonnay here. It's one I've had before and I like it - it's got a very 'buttery'taste to it.
Antnion Rodet - Pinot Noir, Chardonnay, Chablis
Masion Albert Bichot - Chablis, Aligote, Chablis Domaine Long Depaquit
Fetzer - Barrel Select Chardonnay, Napa Valley Reserve Cabernet Sauvignon, Five Rivers Ranch Pinot Noir
For some reason, I just don't care for Fetzer wines - I've tried them a number of times, and still don't like them...
Masi - Campofiorion Ripasso, Serego Alighieri Valpolicella
I liked the Valpolicella a lot! I guess you could say it's the Italian equivalent of a mix between a Cabernet and a Merlot - full bodied but not quite as heavy as a straight Cab.
Robert Mondavi - Carneros Chardonnay, Carneros Pinot Noir, Reserve Cabernet Sauvignon
Ironhorse - Fairy Tale Cuvee, Estate Chardonnay
LOVED the Fairy Tale Cuvee - it's a sparkling white wine, and it is terrific for the price! I drank this a lot on the Disney Cruise - the particular vintage here was made especially for Disney. The Chardonnay is very nice also.
(Oh and THIS was Debbie's favorite too - she ADORED it!! LOL )
Markham Vineyards - Merlot, Cabernet Sauvignon, Chardonnay
The Boston Beer Co. - Samuel Adams Light, Samuel Adams Lager
Bordeaux Wine Bureau - Chateau Magnol, Calvet Bordeaux Sauvignon Blanc, Barton & Guestier Saint Emilion, Collection Philippe de Rothschild Graves
I sample all of these, and found them all very tasty, but I especially liked the St. Emilion.Wines from this region are extremely drinkable, smooth, full of flavor, and quite reasonably priced.
Fess Parker - White Reisling, Santa Barbara County Chardonnay, Syrah
Villa Maria/Esk Valley - Private Bin Sauvignon Blanc, Sauvignon Blanc, Cellar Select Merlot and Cabernet
Talley Vineyards/Bishop's Peak Wines - Arroyo Grande Valley Chardonnay, Paso Robles Cabernet Sauvignon, Central Coast Chardonnay
Kirkland Ranch - Russian River Valley Chardonnay, Cabernet Sauvignon, Merlot
Both the Merlot and the Chardonnay here were especially nice. This is one I hadn't tried before, but now that I have, I'd buy it at home.
Korbel Champagne Cellars - Chardonnay Champagne, Natural, Blanc de Noir
Wente - Crane Ridge Reserve Merlot, Chardonnay, Reserve Pinot Noir
Sterling - Napa Valley Chardonnay, Cabernet, Three Palms Merlot
Sterling's a wonderful bargain priced wine that can pretty much stand up to many more
expensively priced wines. I liked all of the selections here, and buy this at home.
Concha y Toro - Casillero del Diablo Carmenere, Xplorador Chardonnay, Casillero del Diablo Cabernet
I almost passed this by, because I normally don't care for this wine .. but I ended up being glad I stopped! Their Cabernet really was good!!
