I would think that nuts are optional, but probably give it a richer, more complex taste. The secret ingredients in mine are fresh grated ginger and cardamom. Mmmm. Otherwise it's a standard recipe.
Normally I don't like nuts in things. But a lady I once worked with mentioned how the oil from the nuts comes out during the cooking and helps with brownies..... I don't remember much more than that.... but since cooking is like a chemistry class, I didn't want to blow it with this first attempt at this recipe.
Oh, but I am adding chocolate chips! That should even out the nuts!
I add chocolate chips to mine too! I use a recipe for zucchini bread and just delete the zucchini and add the bananas. LOL. And I use Bisquick (if it's on hand) instead of all of the flour stuff. And add nuts and chocolate chips.
Hey, it's a good recipe for zucchini bread. It converts to a pretty good banana bread too.
ETA- The zucchini bread calls for cinnamon too. I keep that in the banana bread. Tastes really good!
Oh...I use milk chocolate chips...not the semi-sweet kind...that will ruin the banana bread. I used the semi-sweet chips before and all I can say is UGH!
oooh - should have added cinnamon... my recipe didn't mention that. Gramps makes a zuchini bread that others rave about - just can't bring myself to eat it. I have that recipe somewhere. I'll check it out.
I used a recipe from Pillsbury - I would imagine you could find it on their web site -it called for sour cream. It's cooking now - we'll see what happens.
