If you were making chicken noodle soup..

I buy the 10lb bag of chicken leg quarters-put them in my stockpot,cover with water and boil till chicken is done
There isn't a lot of bones(2 per piece) so removing the chicken from the bone is easy
I add carrots,celery,corn,green beans(bag of mixed frozen veggies)spinach(also available frozen)garlic,adobo,paprika,italian seasoning,couple of bouillion cubes and noodles

I just bought all the ingredients to make it tonight while the Sox are playing!!

After it is done I divide it into plastic bowls and freeze--It makes enough for about 4 dinners plus the girls take it to school for lunch

It costs me about $11 for all the ingredients and even my picky 5 year old likes it!
 
OP be careful many chicken bases are full of MSG.

You had me worried for a min. I just checked what I have one hand, and neither Minor's or Better than Bullion have MSG. BTB also has a low sodium version but it's been hard to find lately.
However I am slowly switching over (buying it as I run out of the other) to Frontier low sodium organic broth powders.

As for the chicken soup. It really depends on what I haveo n hand and how much work I feel like doing.
From scratch I would bo bone and skin on chicken breast for 8 hrs in my crockpot with celery, salt, pepper, oinion and a couple of table spoons of powdered vegetable broth.
Pull out the chicken and let it cool. Taste broth. If it need bullion/base I would add to taste. Add in shredded chicken,chopped veggies and let cook till veggies are almost tender(about 2 hrs) then add noodles or rice for 15 min or so.
or Leave out the veggies at the end, add 2 tbp corn starch let thicken.
Then make dumplings

either Mix 1 cup flour self rising flour and 3 eggs. Drop by tsp into simmering broth
or make biscuit dough and roll very tin and cut dough into strips then drop inot simmer broth

let either one cook for about 10 min
add chicken at the end and bring back up to eating temp
 
Ok, Jewish Chicken Soup, just like my mom made. I use chicken in quarters, sometimes just breast meat. I put the chicken in the pot, lots of dill, carrots, onions, celery, parnips, and turnips (these area the veggies that are in soup greens from the grocery store). I will add some chicken boullion cubes for extra flavor. I cook for several hours and remove the chicken. I take the meat off the bones and but the chicken back in the pot. I do add salt and pepper to the broth.
