We are adding one day to our land/sea cruise package and not staying on site so we need to buy a one day park pass to use until we pick up the uph when we get to our on site hotel, It will be me my DH and DS (age 2) traveling.

With all that said which park would you buy the ticket for knowing that you had uph for 3 more days after?
I'm trying to figure out which park to buy for so that I can optimize the uph at the other parks?

Hmmm, tough question! Since you will have the UPH pass for the next three days, it is hard to pick! What days will you be on land? What day will you be buying the extra ticket for? I would possibly do MK if you are buying the pass for a weekday, and will have the UPH on a weekend. MK is very crowded on the weekends, and if your extra day is during the week, you might want to do that since it will probably be your 2 year old's favorite. You could also do Sea World that day since you will be offsite anyway. Very hard decision!

It is cheaper to go to the waterparks or Disney Quest than the parks, but those are included in your UPH. If you are intent on doing a full day in a park, I would say Magic Kingdom. You can go there many times on your trip and not be bored...

We will be on land starting Feb 8th which is a Tuesday staying offsite until Feb 10th Thursday check in onsite leave for cruise on Sunday.

Definately Magic Kingdom. I think its the best park by far. It has the most attractions and also the most "classic" type of disney stuff. I think It's a Small World needs to be ridden at least every trip. Well that's my opinion. Oh and Splash Mountain is the best ride ever in the world and its in MK.
