Can I do so the day of without incurring a charge at a place like San Angel Inn or Boma? I know I have to put down CC information for Yachtsman, Cali Grill, etc.

The rule of thumb is... they can't charge you if they don't have your CC info . If you didn't enter the info when booking, then there is no CC-guarantee.
