..........in advance of my trip, and then found out there was going to be one of those great special packages, like free dining, would I have missed the boat on getting that? Or, could the cost of those tickets be put towards that package? Thanks!

2) Packages are packages and must include everything.

You would have missed the boat or need to buy a 1 day ticket (park days do not have to equal hotel nights). This will limit some of the savings but it may be worth it for free dining. If the offer is free hopping and plus like last time it wouldn;t help you unless you nought all new tickets with the package and saved the old ones for a future trip

You can buy any kind of Magic Your Way ticket to go with the package (a few packages have minimums), even 10 day non-expiring, which you can save for future use while using up the tickets you bought earlier.

Note: Every occupant of a room has to have the same kind of ticket ordered for him although he can add features to the ticket individually after check in.

You must buy the meal plan for every night of your stay and for all people in the room. You do not have to buy a ticket for every day, you can just buy a 1 day ticket with the package and use your other ticket for the remaining days.
