As people move due to the complexities of saltwater aquifer intrusion, coastal erosion, rising seawater temps, increasing hurricane costs, and the rising cost of insurance, they could gradually re-wild the state and turn it largely into protected wildlife habitat, and become global leaders in ecosystem protection, biodiversity, and endangered and threatened species preservation.
If all the theme parks decided to pack up and leave over the next few years, my guess is the resorts would end up becoming retirement communities. As for the jobs, you'd probably see a pretty big exodus by theme park workers to other parks around the country, and additional medical facilities would show up near the former resorts. Tourism would still be a huge business thanks to the beaches, but Orlando specifically would probably fill in with cheaper retirement centers.
