Ideas needed for Christmas dinner

I am looking for some good ideas for Christmas day meals. I would like to make something ahead of time and freeze it. I am thinking lasagna or eggplant rollatini but I have never made either of these before and need some good make and freeze recipes. Any other meal ideas would be helpful as well. I don't want to be cooking all day, I just want to relax and enjoy the family. Any suggestions? Thanks!
 
My first suggestion would to be not to try something new on such a special day - if you're having guests.. If it's just your immediate family, that's fine - but if you're having guests and it flops it's going to ruin your whole day..

Any specialties you like that you're familiar with and have made before? Do you plan on a sit-down dinner, buffet, or eat-all-day type of thing?
 
I think I'm just going to throw a roast in the oven, make a potatoe casseole that I can make ahead and freeze, a veggie, bag salad and cressent rolls. and some really fattening chocolate dessert.
 
Usually we just have an all day food fest!!! LOL!! We usually have a brunch and then we start on appetizers. I always make my stuffed mushrooms and other stuff, but I need something to make for dinner that's easy. I though of making a prime rib roast but I would have to make all the sides and it's just too much work. It's usually just me and DH and the kids, but it seems like this year we may have guests popping in and out. That's why I thought of making something I can freeze ahead of time and then just throw in the oven. But I don't know what??

How about a baked ham? You don't really need a lot of "side" dishes with that..

Or crock pots full of meatballs, sausage, peppers, etc. in sauce - with some Italian hero rolls..
 
Venison. And put a big bright red cherry right in front of it. Tell everyone that Santa got tired of staring at deer butts all night. :teeth:
 
I am making a prime rib this year. Easy if you think about it. Toss the potatoes in the oven a couple hours before you want to eat, make a vegetable, toss a salad, put the roast in about an hour after the potatoes, serve with dinner rolls. Easy and I'm not in the kitchen all day! :cool1:
 
At this house, it's EPCOT for Christmas Eve dinner, but Christmas night it will be Turkey ala PUBLIX! Yep, letting them do it all and I don't give a louie that it might not be as good as home cooked. One thing I can say for getting older....I don't sweat the small stuff nearly as much! :teeth:

Every year, there is some kind of venison on the family get together menu. I always ask how it is disuguised this year. Mostly I see it in the hot sticks variety or the sausage. One year someone made a taco platter, and you know what venison hamburger smells like after it was cooked. My sister finally gave it to the dog and the dog wouldn't even it.

Hmmmm I've had Bambi-burgers before and they're actually pretty good..... :confused3
 
I like the lasagna or sausage and peppers idea. Both are quick, easy, make ahead, not a lot of fuss.

Or how about baked ziti?

Or a spiral ham, with a platter of a couple of different cheeses, rolls, condiments that work well with ham, an easy cold mac salad?
 
My sister is having Christmas at her house so it is up to her! :rotfl:

No, she does not want a traditional Christmas dinner this year so, we are doing appetizers and such.
Sounds good to me!
We will just be getting back from WDW, so I won't feel like cooking much!

I am thinking lasagna myself. I'll prepare it ahead of time. I'll probably have to do two--one veggie, one meat. We'll have salad and garlic bread with it. For dessert my Christmas special--Peppermintstick ice cream atop a brownie. Hot fudge and whipped cream for those who care for it.
