hi we are going as a family to disney in a few months and it happens that one night we are there that its my parents anniversary, what can i do to make it special for them? they're in their 40's

I'd say a nice meal at your favorite WDW restaurant followed by an Illuminations Cruise or Wishes Cruise. They are both memorable and a good way to allow the entire family to celebrate in a special fashion.
