Can't get enough of that Mouse!

Alright--the basics. Two traveling, myself (22) and my Mom (52). We like different types of food and like trying new things. Mom hasn't been to Disney since 1994 so a lot has changed. We will be traveling Feb. 24-28. We are on the Dining Plan, so our choices can be a little more exciting (and expensive) than in trips past. This is what I've come up with--I was wanting opinions from my fabulous DISers.
Arrive Friday morning and go to MGM and then later Epcot. Dinner at Le Cellier.
Saturday--I want to know, is it best to go to AK early in the morning or later in the day? I think this day we want to do Animal Kingdom and eat at Boma but we'll need something to fill in--perhaps Downtown Disney. Is this far apart or will getting back to Boma to eat be easy?
Sunday--Will spend the day at Epcot. Dinner at Chefs de France. Any good suggestions of interesting things for lunch? I haven't really tried anything other than France, Canada and Japan around the world showcase so I'd like something new and fun.
Monday-We'll be at the Magic Kingdom. That night we'll be doing OHana (or Whispering Canyon). Any suggestions between the two? I want something fun and tasty but not something that she or I have to be involved in--watching something is fine but I'm not feeling the getting up and dancing thing.
Any suggestions, tips, anything would be helpful...we've been outta the swing of things for the past 11 years.
