I need a restaurant back-up plan...please help!

OK, it's me (pushing 40 ), my mom and my 3 year old. Travel on days 1 and 5 (cannot do TS meals on these days). Single parks on days 2, 3 and 4.

Our plan so far is MK, Studios and Epcot...in that order. We have 4 TS credits each to use. We're doing Crystal Palace lunch at MK. Then Hollywood/Vine character bfast at Studios.

Here's the part I need back-up for:

Currently we have 7:15pm Flying Fish reservations for mom's b-day dinner on day 4. Our plan is to walk back to Epcot to see Illuminations after dinner.

But we have a 3 year old, and things don't always go according to plan!

Soooo...if on our first or second park day we feel that he won't make a late dinner like that (we DO plan to nap/rest every afternoon) I want to change our ADRs to something else and we'll have to use up 2 TS credits...I hate to waste!

Any suggestions? Can't seem to get into Chef Mickey's, but my first choice would be to see if there were any last-minute cancels for day 4 dinner. That would make it easy to get him through it as he'd be totally happy having the characters. Then we could try to get into Teppan Edo or Coral Reef or ??? for lunch. Is there any chance of that happening? Any other ideas?

What about someplace like the Biergarten? I think that it is one of the last Epcot restaurants to fill up.

How about using one of your credits on your EPCOT day to eat breakfast at Cape May Cafe (characters there are a blast!!!). It would be a fun restaurant for all of you!!!! The food and service are great there! Then, you could have dinner at Coral Reef, which is our favorite of the EPCOT restaurants. We love the atmosphere and the food is great too!! Love the blackened catfish and monterrey jack cheese grits!!! YUM!!!!!
