I miss weekend morning breakfasts, anyone have some good recipes?

It's was always a special treat to wake up and go for breakfast, something so charming about the experience - think they just remind me of Dixie Landings breakfasts on my honeymoon :) None of that for me anytime soon so I thought I might ask for favorite home made recipes. I would love Cracker Barrel pancakes because I just found a bottle of their syrup in the cabinet, also really miss fresh bagels, would also adore a really good Tonga Toast, I have tried a few copycats over they years and the disappointment is worse than doing without so I stopped trying.

The crepes are challenging. Once you get it though, it's easier the next time. The kids like theirs with marshmallows, chocolate chips and crushed graham crackers or bananas and nutella. DH and I like our with sauteed spinach (with olive oil & garlic), roasted red peppers and cheese (cheddar, fontina, whatever).
 

We all enjoy breakfast, but our early mornings don't always allow for cooking our favorites. When my oldest went away to college, she was thrilled that her cafeteria offered "B4D" every Thursday night -- so we adopted that same idea in our household: Every Thursday night we have Breakfast for Dinner.

Our favorites:
- Bacon Egg & Cheddar biscuits
- Chicken & Waffles
- Toad in the Hole
- Biscuits & Sausage gravy
- Steel cut oats
- Soft boiled eggs
- Eggs Benedict

Since I can't have dairy and tree nuts, I probably can't specifically help here for a "just like" recipe...BUT, if you want the world's easiest idea...

Aldi has dairy free, tree nut free Belgian Waffles that are toastable. But, you can probably buy regular Belgian waffles.
Trader Joe's had/has (depending if it's gone) Italian strawberries in syrup.

Put the two together with a cup of coffee, and you feel like you're eating a $20 breakfast. Whipped cream (dairy or dairy free) optional:)...
 
I don't have any specific recipes but here are a few things we make:

My husband grinds up oatmeal and incorporates it into the pancake batter. He tops the pancakes with Greek yogurt and some blueberries or other fruit.

Carrot cake pancakes with cream cheese spread...a little goes a long way. This is a go to at a breakfast place I've gone to in the past.
 
Cinnamon Roll French Toast Bake - Overnight

Basic Recipe

1 package of frozen cinnamon rolls - 12 count regular size or mini's I think that its 18 count (not the ones in the refrigerator section)

4 eggs ( x-large)
1 cup of milk ( a full cup and extra splash)
3 tbsp of sugar
1 1/2 tbsp of vanilla - I added in 2 tbsp's, it what my family likes.
1/2 tsp cinnamon -
1/4 tsp nutmeg -

Cream cheese frosting packet that is included from the cinnamon roll package, leave refrigerated.

My Additions:

Chopped, pecans or walnut - sprinkle on top

Shake some cinnamon sugar on top

You can mix the pecans and cinnamon sugar to make sorta a crumble for the top.. gives it a nice crunch...

Instructions

Spray a casserole dish with non-stick cooking spray - use the casserole dish you want to serve in.

Cut the Frozen cinnamon rolls into quarters, evenly spread into the casserole dish

Combine all the other ingredients together in a bowl, Whisk together very well... pour the mixture over the frozen cinnamon rolls in the casserole dish, and cover with plastic wrap, refrigerate overnight... Do not stir... ( so with the do not stir, only once in a while will I sorta adjust the cinnamon rolls quarters to make sure that they all get in the liquid not full on stir, sorta moving around very gently with a spatula as well once they start thawing and rising, do not mess with them..)

The next morning, Pre-heat oven 375.... remove the plastic wrap and bake for 35 to 40 minutes or until the rolls are well browned on top...

Frost with the cream cheese frosting, while warm and serve...

You can also top with your favorite syrup, or drizzle caramel on top...

I always make this during the holiday, great for brunch...

Used King Arthur bread flour because it's what was open and these were just like from a NYC spot, maybe better because they are a bit heavier than we normally have so definitely solid enough for a meal. Yum!

Tomorrow I am going to try one of the sweet recommendations on here :)
 
Eggs Benedict! It's actually not as difficult as most people think it is. I make them occasionally. DH will order it if he sees it on a menu somewhere, but is always disappointed compared to mine. lol

Stuffed french toast- take plain greek yogurt, mix with whatever flavor of instant pudding, sandwich between two slices of bread. Then just make it like french toast. SO good, and you can play with flavors and toppings. I like lemon flavored filling with blueberry topping.

We also do something super simple. Make a bunch of crispy hashbrowns, top with sausage gravy (the stuff in the packets is actually pretty good if you don't have time to make it from scratch) and eggs. Super quick for a weeknight or a quick breakfast.

I was looking around in my recipe binder yesterday... so that I could post the Cinnamon Roll French Toast Casserole that I posted yesterday... Last night I started working on it some more... and I found several other recipes that are old favorites that I haven't made in a while...

Overnight Sausage-Egg Bake...

This one you can change it up with different ingredients... It's Pillsbury and my grandmother gave it to me...

Original Recipe

Ingredients

1 LB on pork sausage - you can use whatever you like, reg, spicy, maple flavored
1 box of (7oz) green giant steamers frozen Antioxidant Blend
10 eggs - large or X- Large
1 cup of whole milk
1 bag of 20oz, Potato O'Brien has browns
2 cups shredded cheese
3 tablespoon of chopped basil leaves...

Instructions

Cook sausage in fully over medium to high heat, make sure to drain completely. You do not want any added oil in the casserole..

Remove pouch of vegetables from box, Place printed side down.. Do Not cut slit in the pouch Microwave on high about 2 minutes or just until thawed

In a large bowl beat eggs and milk a whisk. then Stir in Potatoes, Cooked Sausage, vegetables, 1 cup of the cheese, and 1 tablespoon of the basil.

Spray 13 x 9 inch (3 quart) baking or casserole dish ( even if you non-stick spray the pan, top and sides) Pour mixture into the baking dish and refrigerate up to 12 hours,

Heat oven to 350, Bake 60 to 65 minutes, or until center is set.. Sprinkle with remaining cheese last 5 minutes in the oven. With the basil sprinkle just before just before serving...

My additions and changes

Instead of sausage, I have used leftover ham, or bacon or all three - I tend to make this the last morning if we are having company, its a way to use up any leftover breakfast meats... I also have used, leftover sausages cooked on the grill like Johnsonville's or Polish Kielbasa... I do take the skin or casing off the sausages..

With the box of frozen veggies, you really can use what you want... I normally just use whatever I have on hand in the larger bags of frozen veggies, or left over steamed fresh veggies... Broccoli is a family favorite, you can add in spinach, or mushroom, chopped tomatoes...

My family prefers potatoes O' Brien, I know a friend who use to make it with the shredded hash browns as it was what her family liked...

With the cheese, I just use whatever I have... Colby Jack or Sharp cheddar are my families favorites... and I always use more cheese... about 3 cups - 2 in the mix and 1 on top...

Right before serving I have added with some parsley and basil, some really crispy bacon chopped up, give it some added texture... Green onions or scallions finely chopped are another nice addition to the topping...

Another friend use's ground beef, with taco seasoning, medium salsa in the dish... So you can really change it up to suit your families likes...
 
When I'm feeling ambitious and we want a super luxurious breakfast, I'll make the fam Scotch Eggs! It's a feast for sure, and I love Chef John's recipe. You've gotta have the bed of arugula and the aioli to go with it though. OMG to die for!

Another recipe I recently tried was egg boats in ciabatta rolls. It's like a quiche in a bread bowl. You cut off the top of rolls, empty out the insides, and then put a mixture of egg, a little milk, cheese, herbs and veggies of your choice (I think the recipe I used had feta and sun dried tomatoes) and you bake it on up.
