I got the rec. for the Flame Tree BBQ rub and sauce over at All ears. It is dead on. For anyone who wants to try it after they get the receipe.
I used apple wood (because that is what I had) I don't know what FT uses, but it works.
The trick is to set the chicken in a bath of soy sauce for a few hours.
THen pat dry with paper towels. cover with rub. lift skin and get rub under the skin.
I also put apple juice in the water pan instead of water.
When the meat was done, I crisped the skin by placing over the coals for a few minutes.
Boy, was it good.
