I have my dining list, but have to get rid of 2...what ones?

Personally I'd get rid of HDDR and the Mama Melrose Fantasmic package. HDDR just doesn't appeal to our family. And I don't like the idea of the Fantasmic package. We got much better seats that the package offers by arriving early. Yes it was a long wait but we took in CS food and an activity to keep the kids busy. We found ourselves chatting with those around us and the time just flew by. Another I would consider getting rid of would be 1900PF. We weren't that thrilled with the found and found the character experience very rushed. Also, with boys, maybe there are better options for you.

For your age kids I think you do want to maximize your character meals but with as little overlap as possible.

I would keep CM, CP, and 1900 PF dinners; no overlap at all.

I would consider dropping GG - some character overlap and more limited food choices, all brought to you family style. Fish is one of their highlighted items.

I'd keep Tusker even though you have character overlap just because it's your only breakfast. Alternatively, breakfast is the cheapest meal of the day; if you decide to keep most of your other ADRs you could just pay for this one OOP.

Of the non-character meals I'd drop either Chefs (don't know that the food would really appeal to you all as much) or 50s (don't know that the theming would really appeal to your kids as much, and the food is hit or miss). I would keep Coral Reef both because you said the boys asked for this one and because the steak at this restaurant gets some of the best ratings. This restaurant is about WATCHING the fish more than EATING the fish.
 
my votes are 50s prime time and coral reef - coral reef is heavy on the seafood, although do have good options for non-fish-eaters. the food at 50s prime time just isn't that good.
 

Chefs for sure. We ate there last time and hated it. Especially with 2 little boys to a good choice. My next pick would be 1900 Park Fair. Because of what pp said with it being girly.
 
Chefs de France sucks get rid of it. Other than that I would drop coral reef since you have no fish lovers. They have more than fish on the menu and it is a good restaurant but they have mostly fish on the menu and not much other selection
 
Coral Reef (we were not impressed with the food) and 1900 Park Faire. Our kids loved the Tusker House breakfast. I would definitely keep that one.
