I have a pound of frozen hamburger thawing......

I have a lot of tortillas so I'm thinking mexican lasagna.... I use refried beans, black beans, cheese and flavor the ground beef like I was making tacos. Everyone loves it.

i tried something different recently, and my family loves it.

i had a box of mexican rice mix on the shelf so i prepared it and added it to the mixture i put into tortillas (for enchiladas).

If DH would eat chili, with as cold as it is, that would be right up my alley. But sadly, it's not gonna happen, so I will have to settle for the sloppy joes. With Lays Potato skins chips and big ol' chunks of colby/jack cheese slices.

I made a modified tator tot caserole last night. Not the healthiest food but it was really good on a cold night.

1. Brown it up with some taco seasoning and lay out a make-your-own taco/burrito/nacho bar.

2. Homemade spaghetti sauce, to be used on whatever pasta is at hand, with some gooey italian cheese

3. Homemade hamburger/vegetable soup, with a fresh loaf of crusty french bread

My MIL taught me to brown it up with thinly sliced celery, add some Marsala wine and mix with a bunch of rice.

Also, you can mix it with tomato soup and spices to make either the insides of Tyler Florence's stuffed cabbage or the insides of stuffed peppers.

BBQ Beef Rollups-Brown beef-drain grease and add choice of BBQ sauce.Don't make it too sloppy.Take flour tortillas and roll up a couple tablespoons of beef in tortillas.Bake at 350 till light brown.THese are delicious with sour cream. Also good to melt some cheese in it before rolling up.

Brown with minced garlic and soy sauce - serve with white rice and green beans.

Voila, scrambled hamburger!

If I had the other ingredients on hand that I use (canned tomatoes; dark red kidney beans; chili powder) I would make my chili con carni.. Great meal for a cold night..:goodvibes

DH loves "meal in a frypan", a recipe his Mom used to make often. A pound of hamburger, a can of diced tomatoes, a large can of Bush's baked beans, onion cooked with the hamburger, a little mustard, salt and pepper.

I also like adding a pound of ground beef to 2 packages of Knorr Spanish Rice along with a can of diced tomatoes.
