We are going on our first Disney Cruise out of Port Canaveral in March. We will be staying at the Hyatt Regency Orlando Airport the night before cruise day and then taking the shuttle from MCO to the port. Do we still have to pick a Port Arrival Time? What time should we catch the shuttle? Do we just show up and catch the Disney shuttle or do we have to set up a time (if so, how?)? Thanks in advance for any help!

It is up to you when you want to catch the shuttle to the port. When you check in at the Hyatt, let them know that you will be using Disney transfers. That way you will be on the list for them to pick up your luggage. (You leave the tagged luggage just inside your door and they start picking it up around 8-8:30; they transfer it to the ship, you won't see it again until it is delivered to your stateroom. There is a sheet that you fill out and turn in at the transfer desk to confirm the number of pieces of luggage that were picked up.) You then go at your convenience to the transfer area (near the Magical Express desk), no appointment necessary, and they will put you on the next bus.

You will still need to choose a PAT so will want to do so based on when you wish to arrive at the port and what is available when you do your online check-in. I believe the first DCL transfers leave the airport around 9:15-9:30am.

If you book the Hyatt through DCL, not independently, you will not be held to a PAT. We just got back from our cruise last week, having done a pre-cruise Hyatt stay. I booked the cruise after the PIF date & initially without booking a hotel stay, so initially I did have to choose a PAT. However, I later added the Hyatt stay on via DCL, and when I asked about my PAT (12pm), they said to ignore it & go when I liked because I booked the Hyatt through them & was using their transfers. So the morning of the cruise we slept in and ate breakfast, then boarded the next available DCL bus, and checked in at the port around 11:15am. We were put in boarding group 2 (should have been a much later number given my 12pm PAT and the number of people already crowding the terminal at the time of our arrival). We were onboard the ship around 11:45. So I attribute that to my having booked Hyatt MCO via DCL & taking their transfers.

Everyone must choose a PAT, but they are not enforced. It's just a matter of traffic control, discouraging everyone from showing up at the same time.
You just head downstairs from the Hyatt at your leisure and go to the DCL desk. As long as you purchased transfers, hop on the bus any time that morning. I believe the earliest is around 9am.
