How was I able to reserve Be Our Guest at 7:40 on a night the park closes at 7?

Not uncommon. There are reservations available after the park closes. You won’t be escorted out between park closing and your reservation.

Do you know which restaurants in the parks do this often? I was unable to make ADRs early, and I'm not sure what to even look for.

Park hours are likely to be extended, so it probably won't end up being after closing.

In September we had reservations after park closing for both HS (50's) and MK (BoG). Both were almost an hour after park closing, so even if they don't extend the hours then you'll still be able to eat at that time. We loved it at MK because by the time we were finished eating we were basically the only people in the entire park and the cast members encouraged us to take our time and get some pictures with the castle and Main Street at night (we only took one and then went on our way because I'm sure they wanted to get home!)
