How to choose which night to book Palo or Remy

I am going to be doing a 7 night cruise on the fantasy in May - and we are considering booking Palo or Remy. Ideally we’d like to go on the night they have the regular menu at animator's palate or I guess pirate night I’m not a fan of either of these menus but my least favorite is animators palate. Is there anyway to know the dining rotation prior to that day on the ship? I’m guessing worse case we can just try to get a last minute reservation on one of those nights once we board

Unless you are sailing Concierge, in which case you can request a specific one, you will learn your rotation out of the three used on you cruise the minute you get checked in. But you should be able to know on which day the pirate menu will be served from the previous cruises.

We usually just make reservations based on best guess. We’ve never had trouble moving them to a different night once on board as long as we were flexible about the time.
