Can you make FP+ reservations for the day you plan to check out? Or does that privilege end when you leave the hotel? Similarly, can you make reservations for check-in day?

Doesn’t your ticket media dictate how many days you can select fast passes. Ie if you have a six day pass, you can mKe six days of fast passes even if your trip is nine days, for example.

Yes, good point. You would need a ticket for each day you are reserving FP. I have an annual pass and was looking at it from that perspective. Also if you have an annual pass but are staying off property, you can reserve up to seven days of FPs within a 30-day window, but once you use a day, you can add a day.
You can book FPs for your entire length of stay - including check-in and check-out day - for as many days as you have tickets for (key part of the equation). The maximum number of days you can have booked FPs is 14.

yes. Your FP are based on the number of days of tickets you have, not the number of nights.
Think of it like this
A resort stay "unlocks" the ability to book the FP at 60 days.
At that point, you can book FP for each days worth of tickets, or nights you are staying on site, or the FP limit whichever comes first.

I will have two onsite stays within a 60-day period: an 8-night stay, followed by a 3-night stay. I assume I'll be ok making FPs for my second stay with our APs since they are both onsite and the total number of FP days will be less than 14? Anyone have experience with this?

Yeah, you’re good given the circumstances you describe. FYI, Your 60 day FP window for stay #2 will open up a day early because of the rolling window that carries forward from the first stay. A small bonus for those who have multiple trips in small windows.

As long as you don't stick an off-site stay in between the 2 on-site stays your golden. But do on-site, off-site, on-site and it blows things up and you are stuck with the 7-day limit. As I have followed at least. As one who never stays off-site I've never had the limit issue myself.
