How many days at EPCOT?

I'm now planning on attending the Flower and Garden in early May. I've never been to it before. We typically do two days at EPCOT, no matter the time of year. I'm working on my schedule for May and I'm curious how many days are suggested to get the "most" out of it? When we did Food and Wine two years ago I wished I would have included a third day in my itinerary for EPCOT. We didn't end up having the time to stop and try the foods because all the lines were so long, and we were trying to get through our "typical" EPCOT routine. It was also the last few days of the Maelstrom so that ate up a lot of my time. We are going to stay at one of the EPCOT area hotels (probably Boardwalk) for at least three days of our trip.

Maybe plan for three, but keep the third one flexible so that if you get to all the F&G stuff finished beforehand then you can go to a different park instead.
