If we have a 7:40 dinner will we be out in time to see the fireworks?

Usually 60-90 minutes. Fireworks start at 915pm, so you won't have time to sit around relaxing after you eat and you may not have your choice of spots, but you probably would have time to get around the castle if you want to.

Just tell your waiter what you are trying to accomplish, you likely are not the first person they've waited on that was trying to make the fireworks. Ha Just look over the menu before hand and have your entire order ready to go. That alone will save you time. I've found the waitstaff at WDW restaurants to be very accommodating when it comes to timing due to fireworks.

I think that will have you out in time. What it won't do is have you out in time for a good spot in front of the castle. I have a hunch that for a while those spots are going to be in high demand.

That’s fine we really do not want to fight the crowds in front of the castle. We can watch from anywhere.

Then I think you'll be fine. You can't see the projections in back, but it's amazing to see the fireworks going off all around you behind the castle.

We entered at 1130, left at 1230 after going around to all the rooms to see them. We all knew what we wanted to order though. It was the best meal we had, as usual. They had lamb as a specialty and DIL loved it. The filets are wonderful as usual. It helps if you can tell the waitress what you want when she first arrives and goes over things with you.

We have been watching YouTube so we already know what we want lol.

We have 8:50 reservations, can you see the fireworks from the walkway into BOG? I’m thinking the kids might want to stand out there and watch while we wait for the food to come out? In times past you were not allowed on the walkway unless you had already checked into you reservation.

We've been half a dozen times. Our times range from 1 hour to 2 hours. All depends on the speed of the kitchen and the speed of the waiters.
