Our plane arrives at MCO at about 7:50 at night. I'm trying to decide if we need to pick up our luggage at baggage claim ourselves or let Magical Express deliver them to our room. I had heard it could take up to 3 hours to have bags delivered and my kids will want to be asleep by then. I'm planning on taking essentials in carry-on bags anyway to make sure we have things we really need. How long does bag delivery usually take?

2-3 hours is typical.

make sure to have backuo clothes and items in your carry on. Then again akways assume the airport may loose your luggage. plan for an emergency there is possible.

2-3 hours after you check in, not after you land. Pack what you need for the night in your carry on and leave instructions with bell services to deliver your luggage in the morning.

If your flight lands, ontime, at 7:50, you won't be at your resort until about 9:15ish, maybe a bit later. Figure on 9:30 just to be safe. Your bags are supposed to arrive in your room about 3 hrs after that resort checkin time. So, it could conceivably be past midnight when your bags get to you. Yes, they could get there much sooner, possibly by 10pm. But, best to not plan on it.
IF you don't want to wait up for the bags, just tell the front desk upon checkin, then stop by Bell Services or Luggage Assistence (whichever your resort has) and tell them to hold the bags until morning. Then, hang out the 'privacy please' sign on your door before you go to sleep. First thing in the morning, call down and ask to have your bags brought to the room.

Sounds great! I didn't know we could request them to hold the bags til the morning! Having someone wake up the kids at Midnight to bring bags to us didn't really sound like a great idea, but I like the idea of ME picking up the bags from baggage claim.
That plan sounds like the best of both worlds! We are going to be at ASM and we have already checked in online. I guess when we arrive I will ask them to bring the bags up in the morning. I will pack everything we need for the first night and nexr morning in our carry on bags in case they don't arrive by the time we would like to leave that morning. Is there a number to call or just call the front desk to ask them to bring up the bags?

Just let the front desk know. If Luggage Assistence is still open, and it should be, when you arrive, stop by there and let them know as well.
In the morning, just press the luggage assistence key on your phone and you'll be directed right to the right people.
