How late can you add on Dining Plan?

I currently have the Dining Plan on my package, but I'm beginning to rethink that. I like having the meals paid for, but I would also like some freedom in what I choose to eat, etc. moreso than you get on the Dining Plan (without having to ask for exceptions/substitutions). And I've been thinking if I put some money on a gift card each month for about what I think I'd spend each day, that would be kind of like prepaying.

Then if I discover that I've put the same amount of the Dining Plan on my gift card, I could add it on.

Can that be done? And if so, how close to arrival do I have to do it?

72 hours before check in unless you are DVC or renting DVC, and then it is 48 hrs.

Thanks! The CM (and then a friend I know who's a TA) said up to the day before, but I'd know well before then if I want to add it back.
