Sounds like you have the major expenses out of the way, except your ticket. I buy 7-day hopper passes and use them for more than one trip. If you are not going again for 3 years a 7-day ticket may not be the best thing to get.

As far as meals for my trips, if we order just drinks and entrees, no alcohol or desert.
Per person
lunch about $10 for counter service and $15 dine in.
Dinner: about $10 counter and $15 to $25 for Dinner
We usually only eat one meal a day at the parks.
On our last trip, I consumed snow cone, dole whip, Turkey leg. No room for an actual meal. Cost still $10
Actually my daughter (10) shared with me.
If you are a light eater, try the kiddie meals at the counter service. These are usually plenty for me.
I even ordered one at Sci Fi when I took my daughter. It was more than enough and I got a frisbe to take home.
