How far in advance?

My trip with my adult daughter has been postponed again. Our state is requesting a 2 week quarantine after being in most other states and she cannot do that with her job so we are moving the trip to 2021. We are going November 5 to 16. As of now we are planning 8 days at WDW parks and 1 or 2 at Universal. I've never been to Universal.

I was wondering how far in advance I should make park reservations for the Disney parks. I know Studios books up fast but right now parks hours aren't available for anything close to those dates. I just don't want to get shut out.

Maybe book them now and then have the option to swap things around, if you choose to, when park hours are released.
