how do I cook steak in a skillet?

ok - I bought some steaks for my DH who eats red meat.

I dipped them in egg and milk and pepper mixture.

I put them in a skillet sprayed with oil.

How long do I cook them? how will I know when they are done?

How thick are they and how do you like your steaks? Doesn't help much, so here's something further. Approximate times for a 3/4 inch steak (depending on the thickness of your pan and the fierceness of the heat) 2-4 mins each side for rare, 5-6 minutes for meduim and 7-8 for well done - that's waht I use anyway.

for thicker steaks, if you like your steaks rare, they should feel like your cheek when you press it gently with a finger. For medium it should feel like your chin (the front bit not the extra ones underneath :lmao: ) and for well done it should feel like your forehead. Don't keep sticking a knife in them or all the juices run out and the steaks get tough. And its good to let them rest in a warm place (maybe while you fry some mushrooms) just like you would a roast joint.

Mom could only cook about 6 dishes well & pan fried steaks were one of them!

She used a cast iron skillet & I think set it to a moderately high flame & pre-heated the skillet~

I have never mastered her technique! :rolleyes:
