Hours and dining now that 60th is over... a few questions

I'll be in the park November 1-5 - afternoon of the 1st, all day 2-4, morning of the 5th, and have a five day park hopper. I'm looking at the hours for the park and parades/activities for the next few days as probable guidelines for what it might be when I'm there. Does this seem reasonable? I'm trying to make my dining reservations somewhat blind, not knowing what is happening when.

Right now I have two one-person reservations for Plaza Inn for the character breakfast - 10:40 on Thursday (when I plan to use my MM), and 7:10 on Saturday - and I'm still not sure what time will be better! I feel kinda greedy with two reservations, and want to cancel one as soon as they have more info about the park hours. If I use this week as a guide, MM will start at 9 on Thursday, which gives me 1.5 hours before I need to head to Plaza Inn; following the same logic on Saturday, the park would open at 9 ... if I'm done with my breakfast by 8, and have used my MM, can I still get in to the rides?

So unsure what to do - I guess I can be patient and as soon as the hours are up through November 5 make a decision...
 
If you were able to make a 7:10 am reservation on Saturday, then that means that MM starts at 7 AM that day and regular park opening is 8 AM.
