Does anyone know if you can use the hotwire vouchers for 1 meal and then get the DVC discount on the cash portion?

What do you mean the cash portion? The meal vouchers are good for entree, side, drink, dessert, tax & gratuity included(q&c) or full meal with tax and gratuity(breakfast voucher, kingdom lunch voucher). There would be no cash remaining unless you had alcoholic beverage or a child's meal without a voucher. Most of the dvc perks are for sit-down restaurants where the kingdom lunch vouchers or breakfast ones could be used. We found the dvc discount very useful at Swan/Dolphin restaurants which do not take any of these vouchers or we used the dvc discount at our other favorite restarurants at dinner time when no voucher is good(Kona, Yachtsman).

I mean - we are a family of 3. I would probably only use 1 voucher for 1 appetizer, entree, dessert, beverage. That would leave 2 beverages and 1 or 2 entrees (depending on sharing) and maybe an additional dessert. That would be the cash portion.

Well, I don't have any experience with this sort of a thing...
so I can't really say yes or no to your Discount. Be sure to ask your server before you place your order, and depending on how the WDW computer system is set up, they may have to do two tickets, one for the meal on the voucher, and the other for the cash items so that a discount can be applied.

Yes you can, I've done it. Just tell them when you place your order - they will accomodate it.
