I was able to book category for the 8:30pm show on November 19th.

I am now confused as to whether or not the dining plan will cover this! I have read on here that at the 9:30pm show you are able to get category 1 with the dining plan. Since there is no 9:30pm show in November I assumed that mean that the 8:30pm (last show) would be the same. Is that correct?

I talked to Disney dining and I don't think I got some one qualified! He seemed rather clueless as to whether it was covered on the dining plan or not and also told me he couldn't change the booking to dining plan rather than credit card without cancelling and re-booking it (likely not being able to get the category 1 I currently have according to me).

Help...and thanks for any help in advance.

There is no longer a 9:30 show, the category 1 for DDP applies to the lastest show, which is now 8:30. And yes you should be able to book it, and yes it costs 2 credits.

There should be no reason for you to change your reservation. Did you pay for it in advance already?

I agree you spoke with a clueless CM. Many CMs want to cancel the reservation as the easiest way to refund your credit card, then re-book the res with the dining plan credits. Unfortunately, someone else might be looking at the same time and grab your (now canceled) res before your CM is able to re-book it and then you would be out of luck.

You can try calling back and tell the CM you only want to modify the form of payment. Be sure the CM understands you don't want to cancel the res. If this CM is like your clueless one, ask to speak with a supervisor or hang up and call again. You can also wait until you pick up your tickets and at that time change your form of payment and get a refund to your cc.
