I have a really easy one from Rachel Ray. It consists of browning pasta (broken pieces, etc) and rice in olive oil/butter and then cooking in chicken broth.

I saute onions, mushrooms, peppers in some butter. Then add the rice and chicken broth as liquid. When it's just abouit done I add a small can of Delmonte tomato sauce..just enough to make the rice a light pinkish color
