Homemade Pizza with no Pizza Stone

Can someone help me with this. I want to try to make homemade pizza but I don't have a pizza stone. I looked at the costs of them and they are so expensive. I can't really justify the costs for one of my food experiments.

Does anyone here make pizza without a pizza stone? What do you set the oven on? How thin do you roll out the dough?

I think that is all the questions for now, thanks for the help.

I use a round pizza pan. As for the dough, I unroll it (from the tube :rotfl:) and just fiddle with it to make it round-ish then add my toppings and bake per the directions on the tube of pre-made dough.
 
I make my own dough (1 lb. recipe see below) and use a large cookie sheet. Bake at 425 for 20 minutes for 20 minutes after you put your toppings on. This makes a nice browned crust, and my kids actually like it better than take-out or delivery pizza.

1 lb. pizza dough recipe
2/3 cup water
2 T oil
1 tsp. salt
2 cups flour
1 1/4 tsp. dried yeast or 1 pkg. yeast

Put in bread machine and set for dough. When done, roll into a greased cookie pan and top as desired. Bake at 425 for 15-20 minutes.
 
My boyfriend makes amaaaazing pizza (dough from scratch). He used to do it with cookie sheets, but my mom got him a pizza stone last Christmas. Totally worth the expense, as far as I'm concerned. The pizza is 10x better cooked on the stone. So nice and crispy! They're not that expensive on Amazon, shop around.

I don't use a stone. I jsut use a good bake pan w. olive oil. I buy the dough frozen from supermarket, or pizzeria and it's great. Bake it at about 375 depending on your oven and move it around after about 7 minutes. should be 13 min or so depending on how thick your dough is. GL and YUM

Yeah, with the stone we get the oven up to about 600 - 700 degrees and it cooks in about 5 minutes. If he was making something like a Sicilian pie, he'd use a baking pan/lower temp.
 
We make homemade pizza almost every friday. I use the bread maker to make the dough and double the recipe. We use two large rectangular cookie sheets, or sometimes use cake pans for individual pizzas. Just oil it. Sometimes thin crust, sometimes thick-usually they are lumpy because I just use my hands to shape it out into big rectangles, and it's never the same thickness all the way around. Never tried to roll it out.

We have a small pizza stone and I never use it. It's about the size of a small pizza from Papa Johns, so pretty useless for a family of four. Bought it at a Pampered Chef party-total waste of money for us-I never use it for anything.

My secret tip: We have found that prebaking the crusts at 425 for 5 or so minutes helps it get done. So I bake the crusts for 5 minutes,take it out of the oven and put the toppings on and then back in the oven until the cheese is all melty. You just have to be careful because the pan is hot-I let it cool off a few minutes before the kids put their toppings on. Without prebaking the cheese is kinda brown by the time the crust is cooked enough for us. I don't know if prebaking would be recommended for the pizza crust in the can.

I have a pizza stone but I don't use it when we make homemade pizzas. We usually either make homemade dough or buy it from Trader Joe's and we put it together either on a cookie sheet or pizza pan. We dust a little corn meal on the BACK of the pan and this way we can slide the pizza right off of the back of the pan and directly onto our oven rack. We make thin pizzas with crispy crusts.
 
I threw away my Pampered Chef stones, too heavy! I use a cookie sheet, that's what we always used when I was a kid and it still works!

Can't agree more with Gardenergirl's tip about pre-baking the crusts. :thumbsup2 And FWIW, I've pre-baked using the canned crust as well.

I don't have a stone - a round pizza pan works fine for me.

ShesAPirate is exactly right. I found a pizza stone at Meijer for about $15 and it produces the crispiest crust you could ask for. Get the oven very hot and slide your pizza onto the stone...pizza comes out nice and charred around the edges in less than 8 minutes. Be sure to use fresh mozz and basil and you'll think you are at Via Napoli all over again.

However, if you can't justify the cost of a pizza stone, you could use cast iron...the real key is the hot oven and a dry/porous surface that will hold the heat to cook on.

I would think that the recipe calls for 2 cups of flour after the salt, not an additional 2 cups water and no flour.
 
I usually make mine on the grill ~ right on the rack, no pan involved. I also make my own dough in my bread machine and my own pizza sauce :)
 
I have a pizza stone but it rarely gets used. We make pizza on cookie sheets. I'm a klutz so I have never successfully assembled a pizza and slid it onto the hot stone. Much safer for me to assemble the pizza on a cookie sheet and put the whole thing in the oven!
 
I used a stone one time for cookies and one for pizza, worst mistake of my life. IMHO, they are a total rip off. My kids said it was terrible and told me never to use it again. Most people love them, but I think they are way over rated.

You need a pizza peel (sp?) to get the pizza on and off the stone.

Just watched a Good Eats rerun the other day and Alton Brown made pizza. He recommended going to a home improvement store and getting an unglazed stone tile. Pretty much the same thing and pennies compared to a marketed pizza stone.
 
We have an Air Bake pizza pan, 15", and though it cost us about $15 it was the best investment we've made. We make really crispy pizzas on it and the Teflon coating makes it a breeze to clean. The one we have has lasted us 5+ years of light use.
