If the park is open til 8, why aren't ABC and Backlot Exp open for evening dining? One closes at 4:30 and the other 5.

Not sure anyone here could answer that question.

While I cannot answer this exact question, I can say even pre-covid it was not unusual for Backlot especially to close hours before the park did. Whenever we wanted to eat there we had to remember to do so at lunch as they often were closed before dinner.

It must be that not that many people want to eat an evening meal there, but are happy to have lunch at those places.
I'm sure Disney has the data to back that up, otherwise they would be open.

A few thoughts: Staffing is a bit short right now, but they are working on hiring more. Some areas of the park are less busy in the evening and some are more crowded. The QS places in Star Wars, Toy Story, and near RNR are open later. Probably because more people are in those areas.
