High temp roast beef

I was told of a way to do roast beef but I can't remember the details. You cook the roast at a high temp then turn the oven off for a couple hours. Has anyone done this? Can you put carrots and potatoes in too?

Ooooh I did this once. I think I pre-heated the oven to 500, then put the roast in and lowered the temp to 475. I let it roast for about 7 minutes per pound, then turned the oven off and let the roast sit on the oven for 2.5 hours. It was rare, which was how we like it so it was fine. This method is supposidly best for your tougher cuts of meat (eye of round was what I used). Don't know about putting vegetables in there, but I wonder if they'd get mushy after that much time.
 
I believe I saw this done by Paula Deen from Food Network.... maybe google that?
