I'm sorry, I can't help you too much, but I'll share what we've done in the past couple of years.
One year my DS was studying "Visualize World Geography" which uses pictographs to learn the countries, so we made sure we studied the one's showcased in Epcot prior to our trip.
I also made an Epcot book for him. Each country was in there, with a close up of the map showing it's location. Then DS and I came up with a few "interview" type questions (Like what's your favorite food in your country? in the USA?). We would look for a CM in each country that was NOT busy, I would explain what we were doing (getting school credit was easiest way to explain), and he asked them the questions. One question that was great was for them to show him on the map where they were from. Most CMs wrote a little note to him in his book in their language and the translation. All of the CMs welcomed the interaction and were very friendly. It was an AWESOME experience!!!
We went in December one year and altered the questions to be "holiday" related.
Epcot is tough for a lesson plan since there are so many counties. Finding them on a world map is great and comparing their differences is too. The cia has a great resource for information on different countries.

OT - my DS studied "Exploring Creation through Botany" and we did the Behind the Seeds tour in the Land - it was a GREAT compliment to his studies!!!!
