Help with plans

Me dh and I are taking a quick trip in August and my plans were AK (day) and MGM at night for Friday. Epcot til dinner then DTD after on Saturday. My question is should we switch it to AK and Epcot on friday because Epcot is a EMH night?Then do MGM Sat? Friday is our first day and we leave Monday night. We want to do SE, TT possibly Soarin, I want to see Turtle talk with Crush and walk around the countries. Are the countries open for night EMH and is it 3hrs? Help please not sure wether to change or leave alone lol.

Here's a list of attractions open for Epcot Evening EMH:
Living with the Land, Mission: SPACE, Soarin', Spaceship Earth, Test Track, Honey, I Shrunk the Audience, Journey Into Imagination, El Río del Tiempo, Maelstrom, The American Adventure

Personally, I'd do Epcot all day on the EMH day, and do the other 2 the following day. But that's just me.

I would keep your plan. The rides you want to do are good for the early am, then walking the countries after 11. I would save SE until you leave the park before going to DTD. I avoided EMH parks when I went on Memorial Day weekend and never felt I was in an overly crowded park.
