help with outside the park activities

My fiancee and I are going to WDW this winter..in Jan. We are staying at our DVC. We are going sunday to friday. But I was thinking of staying maybe Thursday or friday until we check into our DVCR. Does anyone have any ideas on what else to do. WE did stay like this one time before, but basically went to just seaworld and Kennedy space center.

I was just looking for some other ideas and stuff. and any good hotels
