Help with Cozumel

I am hoping to get some help with the following questions:

1. Where does DCL dock?
2. Can you get to the manatees without going through DCL because DCL is sold out.
3. Has anyone done the Mexican Cuisine Workshop?

I haven't been to Cozumel yet, so can't help with #2 or #3, but I've also been planning for an intinerary with Cozumel and based on reports I've read (and also this port calendar: http://servicios.apiqroo.com.mx/programacion/) it looks like Disney typically docks at Punta Langosta.
