Landscapes are always a good choice.
If you're feeling brave try drawing a person, maybe someone who has a lot of emotion in there face.

I mostly draw anime/manga characters though.

Maybe do your take on a bible character, but it wouldn't have to be a "realistic" sort of drawing. Could be more cartoonish.

I'd do a landscape. What would be really cool would be to do a landscape with cindy's castle in the backround, like at wdw. Actually like in your avatar. That might be tricky though, depending on how easy/difficult you want this drawing to be
