HELP! Who wants to help me plan a surprise trip for my best girlfriend??

Hey y'all - I started this on another (probably the wrong) board and got no responses, so I'm hoping you Planning/Pre-Trip Champs can help me!!

I am helping to plan a surprise trip for my best girlfriend in January - unfortunately, it's Marathon Weekend. I'm basically in charge of everything - the boys are in for the trip, but don't care about the details. My girlfriend is completely in the dark, so I can't consult her. Help! I need people to help me obsess over the details and make sure I have everything covered!!

Background:
* The trip will be me and my husband (ages 32 and 40) and my best girlfriend and her boyfriend (ages 28 and 35).
* The trip is a surprise Christmas present for my best girlfriend. She has only been to Disney once, when she was 7, and only remembers the Peter Pan ride and her aunt being really angry with her.
* Girlfriend loves - I mean ... LOVES Cinderella. Dresses up as her every Halloween, all that.
* We're staying off-property, so FP+, EMH, is not an option. We are planning to do rope drop every day to maximize E-Ticket rideage.
* We're doing at a day each at MK, EPCOT and DHS. No AK this trip.

So.

I've done the obvious and booked a meal at CRT for our MK day. And we plan to share drinks around the world at EPCOT on that day. But what else should I make sure to plan for so she has the BEST. TRIP. EVER. This is a Christmas present - and potentially a VERY important one.

Also, would it be bad form if we wore Princess-styled adult tutus over our leggings at Magic Kingdom? With tiaras?

I'm also looking for suggestions on things I can pre-buy to put together as Christmas presents for her that will supplement this trip (but not gift cards). My parents live 10 minutes from DTD, so they can get things for me from there.

Thanks in advance - and I'm looking for ANY ideas, even just little places to take pictures or fun, surprise stuff.
 
OK, rough outline:

My parents still own a lovely house about 10-12 minutes from Maingate Disney, so we're lucky enough to be staying there for the long weekend.

They arrive late on a Wednesday night from DFW, so our first park day will be Thursday. This is kinda what I'm thinking based on the Crowd Calendar I saw at EasyWDW.com:

Thursday: DHS. Is TSMM REALLY worth getting there at Rope Drop or waiting in line for? How much different is it than Buzz Lightyear. We're really in it for ToT and RnRC, plus some other rides and Fantasmic. We would only get to the park at Rope Drop if TSMM is really worth it.
Friday: Magic Kingdom at Rope Drop. Breakfast at CRT. Late lunch at BOG. If we have downtime during the day, we'll use the Monorail to bar-hop through the Monorail Loop resorts. I haven't done MK in years, so I'm looking for any help on how to hit the rides without FP+, and with Splash being down for rehab.
Saturday: EPCOT. Will get there at Rope Drop. We did EPCOT two years ago on New Year's Eve and managed to ride everything in Future World twice before WS opened, and then again one more time before the end of the day. The plan is to knock as much of FW out as many times as possible before WS opens and then spend the rest of the day there eating and drinking around the World until Illuminations.
Sunday: IoA/USO, thanks to comp tickets from my brother.
Monday: Their flight leaves from MCO at 7:35 p.m., so we plan to do a little resort sightseeing. Maybe Boardwalk? Downtown Disney is out because of the construction, etc.
