Help me with meal planning for a two week trip!

We'll be at FW for 12 nights, with only four lunch reservations and one dinner. Needless to say, we plan on eating a lot at our trailer at FW.

Lunches are easy. We're a sandwich family. But dinners are stumping me. I want to cook as little as possible. So I'm thinking about cooking up 2 lbs of ground beef, for example, and use it for spaghetti one night, tacos another and something else a third. I'm also hoping to grill like 3 lbs of chicken and do it plain one night, chicken phillies another and blah blah blah. You get my point. I'm looking for your ideas! Help me out with some easy meals!

I'm a big fan of the crock pot at the Fort. I will make things ahead of time and freeze them, like chili, spag sauce, chicken and dumplings, etc. Put the meal in the crock pot in the morning, and when you return to the RV it's ready to eat. I also like to plan a few grilling meals, like burgers, sausages, hot dogs, chicken, steak...whatever. Nothing beats grilling at the Fort while enjoying a cold beverage!
 
I have made a pan of lasagna or meat sauce, beef stew, chili, taco meat, smoked a pork tenderloin and red beans prior to leaving home. I also cook and freeze the spagetti and rice that go with the meals. I freeze the meals in seal -a -meal bags (except lasagna) and warm in the microwave or crock pot for easy ready to eat meals.
 
I second DaveInTN's suggestion about grilling. We never eat hot dogs at home, but throw a few on the grill at the Fort, break out some buns, open a bag of chips, and you've got a meal.

Another idea is Macaroni and Cheese. They sell packages of Mickey shaped macaroni and cheese in the Trading Posts. It looks like a box of Kraft macaroni and cheese, but it costs approximately ten times as much (give or take a few dollars). But, it still is an inexpensive and fun meal to make.

It sounds like you have this almost figured out, so throw in a couple nights of grilling, and some mac and cheese, and you are good to go.

I make barbeque and freeze it. Also, marinate boneless chicken breast, bake it and then freeze it. You can thaw it out and serve it over rice. We also throw in a couple of lean cuisines if we need something really quick and forgot to thaw something out and don't want to take the time to microwave it. Cook a roast, slice it, and freeze it in the juices. We usually only eat out once. That's how we can afford to pay for the gas.:earsboy:
 
I'm a big fan of crock-pot cooking too - just recently purchased one to leave in the camper (no more remembering to pack it).
 
So I am in the same RV, planning a two week trip with lots of RV cooking. Has anybody used dry ice for long storage for pre cooked food? Maybe go with two coolers. Regular ice for week one and dry ice week 2? Below R meal ideas

Also keep in mind the ever-popular and tasty Giddyap N Go fried chicken takeout dinner from Trails End. I don't know how big your family is, but I can tell you that that dinner is big enough for my family of 6 to get TWO meals out of it...all for about $25. It's a great deal, especially for those nights when you just don't want to cook. In my mind, you almost couldn't cook it yourself for $25 when you consider how much food you get.
 
Don't know if this will help but, before we went I kind of "doubled up" my dinners the week before. I just doubled what I'd normally make for my family. I think I made... pulled pork BBQ, sloppy joe, lasagna, a potato casserole as a side, taco meat, and the last night before we left we grilled chicken and I made a bunch of chiken salad with the left over. It just made it easier. We had two travel days and then burgers and dogs the first night so it wasn't an immediate repeat of what we'd just had.
