help me with a fancy appetizer receipe please

We are going to a New Years party and I need a fancy appetizer to take. Our friends are big foodies and the wife is an outstanding cook! I would like to take something that can be refrigerated overnight as we will be there new years eve and then for the party the next day.

Will you have oven access? I love doing a Baked Brie. Very simple just take puff pastry and lay it out, lay the brie in the middle, slather the top generously with seedless res raspberry jam. Then fold in the dough and seal. Bak at 350/375 until the pastry and golden and serve with some water crackers.
 
I do a baked Brie the looks fairly fancy but is extremely simple. Take a wheel of brie and rub the top with Curry Powder. Then top with Mango Chutney and baked at 400 for 15 minutes. After it is done top with cashews. Yummmm.


Here is another easy but good one:

Blue Cheese and Pear Tarlets


Ingredients:
4 oz Blue cheese crumbled
1 large ripe pear peeled, cored and chopped
2 tablespoons light cream
Ground black pepper to tase
1 package (2.1 oz) mini phyllo tart shells

Directions:
1. Prebake phyllo shells according to package directions. Set aside to cool.
2. Mix together blue cheese, pear, and cream. Season to taste with pepper. Spoon mixture into cooled shells.
3. Bake at 350 degrees F (175 degrees C) for 15 minutes. Serve warm.
Makes 15 servings: 60 cals 3.6g fat 4.5g carbs 2.2g protein



This next one is super easy if you have a food processor.

Crab Stuffed Mushrooms
Come out very good, and quite easy with a food processor.

Ingredients:
3 tablespoons butter, melted
24 fresh mushrooms
2 tablespoons butter
2 tablespoons minced green onions
1 teaspoon lemon juice
1 cup diced cooked crabmeat
1/2 cup soft bread crumbs
1 egg, beaten
1/2 teaspoon dried dill weed
3/4 cup shredded Monterey Jack cheese, divided
1/4 cup dry white wine

Method:
1. Preheat oven to 400 degrees F (200 degrees C). Prepare a 9x13 inch baking dish with 3 tablespoons butter.
2. Remove stems from mushrooms. Set aside caps. Finely chop stems.
3. Melt 2 tablespoons butter in a medium saucepan over medium heat. Stir in the chopped stems and green onions and cook until soft, about 3 minutes. Remove saucepan from heat. Stir in lemon juice, crabmeat, soft bread crumbs, egg, dill weed and 1/4 cup Monterey Jack cheese. Thoroughly blend the mixture.
4. Place mushroom caps in the buttered pan, and stir until caps are coated with the butter. Arrange caps cavity side up, and stuff cavities generously with the green onion and crabmeat mixture. Top with remaining Monterey Jack cheese. Pour wine into the pan around the mushrooms.
5. Bake uncovered in the preheated oven 15 to 20 minutes, until cheese is melted and lightly browned. Serve warm. Makes 24 mushrooms.

Tweak: Add several cloves chopped garlic to step mushroom stem mix.
Nutrition: 3 mushrooms: 177 cals 12g fat 8g carbs 10g protein
 
I have posted this on an earlier appetizer thread but this is so easy and one of the best appetizers that I have had in a while. This comes from Flemmings Steak House. Use Baby (or Butter) Iceberg Lettuce leaves as holders for a mixture of chopped avocado, chopped boiled eggs, and lump crab meat. Sprinkle crumbled bacon and chives on top. The restaurant serves theirs with something called Thousand Island Vinagarette dressing but it is so good that you don't need to include this.

I find the big brie a bit harder to serve a crowd, so we take the little phyllo cups and put in a piece of brie then a whole cranberry and a little sauce (from the canned whole berry cranberry jelly) and bake. Bite sized and a bit less messy.
 
This is a variation of Manhattan Princess' recipe.....take a phyllo cup and put in a little piece of brie, raspberry jam and top with a slivered almond...bake at 350 until the cheese melts (only a few minutes). You can prefill them at home then bake at the party.

We make this too but also sprinkle chopped pecans over the raspberry jam and bake.
