Help Me Plan My Resort Hopping Day!

We have a family trip planned to Universal 12/6-12/8. Kids will leave but DH and I will stay for a few more days. Thought of switching to a Disney Resort but just bought Uni AP's so trying to save money.

I'd like to spend a day resort/restaurant/lounge/QS hopping around Disney resorts, especially ones I have not been to.
Here is my preliminary plan - where should I tweak it? Are boats that I need even open?

Uber to CR - late breakfast at Chef Mickeys
**Do I need to walk to MK to catch the boats to the following resorts?
Boat to WL - check out Geyser Point
Boat to GF (or is the walking path from MK open?)
Walk to Poly (been to both GF and Poly so I can skip these - but never been to Trader Sam's! - What's good at GF?)
Take a bus to HS - Skyliner to Riviera - isn't there a rooftop lounge or restaurant?
Skyliner to Epcot and revisit the BW area (our traditional Disney resort) - plenty of places to check out there, including Swolphin, YC/BC etc.
Bus from BWI to Disney Springs for a late dinner and uber back to Universal

I think you can get a boat to WL from CR. Ask when you get there.

I don't think you can boat from WL to GF. Not positive though.

Enchanted Rose is open at GF. I haven't been but we loved the old lounge. I'm assuming it's similar.

You can walk to Poly from GF quite easily. As of right now, Trader Sam's is closed.

Can't help you with Riviera because I haven't been there.

You'll have to take a boat from the MK to get to WL (it will probably still be closed in Dec, but the villas are both open) and then a boat back to MK from WL. Then hop the monorail to get to the GF. Like holden said, Trader Sam's is closed. The monorail will not stop at the Polynesian since that stop will be under renovation. In Dec, both the BWI and BC may still be closed.
