We are trying to work around school and would like to go when the weather is good and the crowds not bad. We have never been to WDW and are from AZ so don't know when or if we will go again. We would love to ride as many rides as possible without there being a huge crowd. We also will be staying offsite at Windsor Hills.

Our choices are

Dec 28 - Jan 4
Mar 11 - 18
May 26 - Jun 2
Jun 2 - 9
(Basically anytime between May 26 & Jun 9)

You might want to look at crowd calendars, and there are some threads about how hard it is getting to predict crowds now. Plus, when crowds are low, apparently Disney also reduces staffing, so although there are less people there are also less open rides etc, so it does not reduce the waiting times necessarily. I think the New Year's holiday will be massively crowded and maybe Memorial Day, too. If I were you, I think I'd pick the March dates and cross my fingers!

wow, those are some tough choices if avoiding crowds is the goal. March 11-18 2017 is smack in the middle of "spring break" but several weeks from Easter. May 26- June 2 encompasses Memorial Day weekend so I'd avoid that. Obviously New Years week is super, super crowded.

That said, one of the many trips I took to WDW was the week leading into Easter and it was "doable" just not as pleasant as other times we've gone (Feb and early May). You will have to plan your FP+s carefully and use a good plan/crowd predictor to avoid parks on their highest attendance days. Pack your patience and have a good time!

I would stay away from Dec-Jan, as that is the busiest time of the entire year. Memorial day would also be difficult with big crowds. Go with March!

Of the choices you listed, May or June will be the best. It'll be hot, but if you're in AZ, you're probably used to it. That time of year, you'll have a decent chance of t-storms, but more often than not it's sunny most of the day, a storm pops up...passes through...and the sun comes back out. WDW is always crowded, but major holidays are more so, such as Christmas season or Spring Break. Late May or early June won't be quite as bad as many schools in the mid-Atlantic are still in session, and that's where a huge chunk of WDW demographics come from.

Don't sweat the crowd calendars. They're hit or miss at best.

If you might be interested in the water parks, then I wouldn't do dec/jan. Something else to consider, I think the Christmas decorations and gingerbread creations at the resorts are still up.

In March, epcot has the flower and garden festival and the eggstravaganza egg hunt. It's not so hot then.

Not sure about pricing comparisons between summer vs spring break vs New year's, but Disney AOA pricing went up in June. Late May was a bit cheaper. Not sure if that might be the case for other resorts.

Working around school breaks and wanting low crowds are a bit of a conflict!
Dec 28-Jan 4 is New Years = Crowded
Mar 11-18 is Spring Break = Crowded
May 26 - Jun 2 is Memorial Weekend = Crowded

Jun 2 - Jun 9 is start of Summer vacation.
Lower than the above weeks but expect moderatly busy crowds. Still much better than later in the summer. Weather can be hot but not nearly as bad as July/Aug/Sept and less rain.
