Help me choose menu items for planning session

I'm going to WDW in June for my planning session/menu tasting. We're having a dinner, but haven't decided between plated or buffet yet. So here's my questions:

- Do they offer family style?
- The document that I have to fill out says choose a maximum of 8 items and Proteins (up to 3), so is this 7 items and 3 proteins?
- I would love suggestions for food for the menu tasting. What did you have at your wedding and/or tasting that you really liked?

We just had our menu tasting on Friday. It is 8 total. We tried crab cakes, chicken and cheese quesadillas that will be cut in the shape of Mickey heads, beef skewers, penne a la vodka, parmesan crusted chicken, oak grilled filet with red wine reduction (from Jiko),blackened mahi, garlic mashed, green beans, and the ice glass slipper sorbet with the raspberry sorbet. Everything was amazing. We are going to do our menu the same as we tried it. The guests will have dual entree between steak and chicken or steak and fish. Jeff and I will have the trio of small portions. We didn't waste our time trying a salad, we will just be doing a garden salad at the wedding. I am going to post pics in my PJ later to check out.
 
They do offer family-style reception meals. Usually the appetizer and salad are individually plated and everything else is shared.

My recommendation is to ask to taste things they might screw up/that must taste exactly a certain way. Meaning, if you have a family recipe or want a dish off a Disney restaurant menu, ask to try that to see if it actually tastes like you want it to. (My horror story is Hollywood Studios' rendition of Jiko's white cheddar macaroni & cheese, which tasted like a soupy version of Stouffer's.)
