Help for trying to decide on another ADR!!

So I just found out that Fantasmic only plays at 9pm certain days of the week, correct? 9pm is too late for us, we'll be travelling with DD2 and want to take advantage of getting to the parks early in the a.m. so 9pm is out of the question if we want her up early in the a.m. I have planned two late nights to stay for fireworks where the following days we are either having a down day or leaving.

Anyways, I'm trying to decide on another restaurant. This is what I have so far...

Sat - arrive, go to Epcot and have dinner at Akershus for the princesses
Sun - AK, go to Boma for dinner at AKL
Mon - MK, go to Chef Mickey's
Tues - DHS, go to Mama Mel's...but if we don't want to Fantasic dinner package because of the time then is there somewhere better to go? I was thinking of maybe Cape May but any other ones?????
Wed- MK, O'Hana's for dinner
Thurs - down day, QS at DTD
Fri - Epcot, 5th anniversary dinner at Narcoossee's
Sat - MK, leave

Soooo, question is for Tuesday...I like the menus of some of the other restaurants at Epcot but we're not doing park hopper so that's not an option. Hmmm, as I'm typing this out, I guess we could do Narcoossee's on Tues and a restaurant at Epcot on Fri, even though Fri is our anniversary, I guess it doesn't matter. But is there any other resort restaurants that we should check out for the Tues? We are driving down so will have our own car so that's not an issue in getting around to other resorts.
