Help choose Signature Restaurants!

Okay so my DH and I are going with the DxDP - YAY!

Now, I need help choosing the Signature restaurants to try. We have already tried California Grill, so that's out for this trip (although I'd go back in a heartbeat, we want to try something new).

Here are our choices, we must pick only 4!!

(we are staying 5 nights, but one of the nights is going to be Rose and Crown to see Illuminations, the only show we didn't see last year)

Artist Point
Flying Fish
Yachtsman Steakhouse
Hollywood Brown Derby
Jiko

Help us choose the 4 - also, would you replace any of these with a dinner show, like Hoop de Doo or the Luau show?

I've eaten at all of these many times and I would place them in this order:

1. Jiko (unique appetizers, most adult atmosphere)
2. Flying Fish (best entrees)
3. Citricos (best overall menu)
4. HBD (in the park, fun to look at the drawings)
5. Yachtsman (great service)
6. Artist Point (unique menu but dislike the rustic setting)
7. Narcoosees (pretty setting on the water but not very upscale)

You won't go wrong with any of these. I'd go to just about any one in a heart beat. About the only one that doesn't realy grab us is Brown Derby. Of the others, I might just pick according to where I was that day/night or perahps which is more convenient to where I was staying.
