HELP!! Best parks for Columbus day weekend?

We are going to WDW Sept 30 - Oct 12 and I knew it was during our Canadian Thanksgiving but did not realize that this weekend was a US holiday also. Could make for busy parks. What parks do you think would be best on those days? Will the whole weekend be busy? We also plan to visit USF, IOA and Seaworld one day each during our trip.

We arrived on the Saturday of Columbus day weekend last year, went to Epcot Saturday (around 2 or 3), it wasn't overwhelmingly busy, since it's a big park it handles the crowds well.
That Sunday we went to Animal Kingdom.....That park does NOT handle crowds well, we got tired of the crowds and left earlier than we had planned. Monday, Columbus Day, at MGM the crowd level was fine, we went at rope drop, stayed all day til Fantasmic and everything was great, no long waits; it was very hot so we were a bit slower moving and lingered longer at lunch that we intended to, but we got a lot done.
