DH and I lilke to "wing it" as well. So, we make a couple of ADR's we know we're going to want, then play it by ear. The key thing is we go at a slow time -- which allows us the flexibility to call an hour or two before we want to eat somewhere and secure a reservation. That's why we avoid things like the free dining promotion.
