Has Anyone Tried This Approach?

This is exactly what we've done our last few trips. On our last family trip we saved almost $600 US by paying OOP vs using the DDP. We did the same as you by ordering breakfast items, water and snacks for the room. We had 1 ts a day (generally an early to mid afternoon meal) and snacked or picked up a light CS meal as wished. It was perfect!
 
Sounds like a great plan. We end up doing this on some of our trips. We do have a young child, but she is super flexible and happy to snack here and there around meals. I think an additional bonus is that ADRs at "off" times like late lunch/early dinner are easier to find. (Frankly, this is WHY we have ended up doing this on some trips! I rarely plan 6+ months ahead of time, and usually make ADRs around four months prior to the trip.)
