Half board help!

Been reading all the threads around half board & im a little confused

I understand that half board premium are £31/per adult, but have a €44 face value if I eat from the standard menu.

If 2 eat in a buffet which is €23/each for example, would it be one voucher each, or could I use 1 voucher & pay the €2 difference?

Yes, if the buffet is €23 you would just pay the additonal €2.

Also, from experience is it better value to eat from the set menu or use a face value?
